The Pastry Science and Technology course starts with the basics and offers comprehensive and advanced training in Italian pastry making, covering all aspects of the industry, from laboratory pastry making to restaurant pastry making, including specialties such as chocolate making, large-scale leavened products, and gelato making. The program includes four months of practical lessons at the Institute and up to four months of internships at selected facilities throughout Italy.

The cost of the Pastry Science and Technology Course is €9,600.00 (VAT exempt) with a registration fee of €450.00. A 20% deposit is available upon registration and the remainder is due before the course begins. Alternatively, thanks to partnerships with banks, the entire amount can be financed in monthly installments. The Institute also offers direct interest-free deferral or a merit-based loan for those who have achieved at least 70/100 on their high school diploma or have a bachelor's degree. This loan allows students to receive the sum immediately and begin paying it back two years after completing the course.
